1 cup thinly sliced mushrooms, shredded carrot and spring onions

Remove noodles from pouch and soak in boiling water for 1-2 minutes. Separate gently with a fork and drain well.

Heat a tbsp oil in a wok or frypan over a high heat and cook diced chicken 5 – 7 minutes (or until cooked through). Add shredded vegetables for 1 – 2 minutes more.

Add noodles and satay sauce to wok and mix until hot and combined well. Serve sprinkled with chopped peanuts.
