Ingredients
- Mr Chen’s vermicelli noodles
- 1 carrot, julienned
- ½ wombok, sliced
- ½ red onion, sliced
- ¼ cucumber, cut in small pieces
- Handful of edamame
- 2 spring onions, sliced
Sauce:
- 2 tbsp fish sauce
- 2 tbsp Mr Chen’s Rice Wine Vinegar
- 1 tbsp sugar
- 1 red chilli, chopped

Method
Bring water to boil and cook vermicelli noodles according to the packet. Drain and rinse with cold water.
Cut all the vegetables once the noodles are cooled, mix all the ingredients together in a bowl.
Mix sauce together, pour over salad and serve.
