Ingredients

  • 3 tbsp Mr Chen’s Red Curry Paste
  • 400ml Mr Chen’s Coconut Milk
  • 2 tbsp Vegetable Oil
  • 250g Green Peeled Prawns
  • 2 cups Diced Vegetables (eggplant, snowpeas, capsicum etc)
  • 1 tbsp Palm or brown sugar
  • 1 tsp Lime juice
  • Thai basil leaves (optional)
  • Red chilli, sliced (optional)

Method

Heat the oil in a large pan over high heat and stir-fry curry paste until fragrant (1-2 minutes).

Add coconut milk and stir to combine.

Add prawns and vegetables and simmer until cooked through (approx 7-10 minutes).

Add sugar and lime juice.

Serve over jasmine rice, garnished with Thai basil and red chilli.
