Ingredients
- Mr Chen’s Bao Buns
- 500g boneless pork but, pork scotch
- 1 1/2 cups Mr Chen’s Coconut Milk
- 2 1/2 tablespoons Mr Chen’s Red Curry Paste
- 2 cups water
- 2 tbsp oil
- 2 teaspoons Mr Chen’s Dark Soy Sauce
- 1 teaspoon fish sauce
Asian slaw:
- Carrot, julienned
- Brown/red onion, chopped
- Red cabbage, sliced
- Parsley, chopped
- Coriander, chopped
- Lime Juice
- 1 tsp palm sugar

Combine curry paste and milk. Mix until thoroughly combined. Add pork and marinate overnight in the refrigerator.

In a pot, heat enough oil to coat bottom of pot, approximately 2 tablespoons. Remove meat from marinade and sear the meat until it is browned on all sides. Reserve the marinade.

Add marinating liquid and 2 cups water. Bring to a boil. Reduce to a simmer and cook for 2 hours.

As soon as it is cool enough to handle, shred meat by hand or chop finely.
Add Mr Chen’s Dark Soy Sauce and fish sauce. Stir to combine. Reduce the sauce by half.

Steam Mr Chen’s Bao Buns, per package instructions.

Assemble baos with Asian slaw, pork marinade and top with coriander.
