Ingredients
300 g Mr Chen’s Sweet Potato Glass Noodles
1 Tbsp vegetable oil
250 g beef, chicken or tofu strips
1 carrot, julienned
1 capsicum, sliced
1 onion, sliced
2 cups baby spinach leaves
3 Tbsp Mr Chen’s Soy Sauce
1½ Tbsp Mr Chen’s Sesame Oil
1 tsp sugar
2 garlic cloves, minced
Sesame seeds and spring onion, to garnish

Method
Cook the noodles according to the packet instructions. Drain and set aside.
Heat the vegetable oil in a large frying pan over medium-high heat. Stir-fry the beef, chicken or tofu until cooked through.
Add the vegetables and cook until tender.
Add the noodles, soy sauce, sesame oil, sugar and garlic. Toss until evenly coated and glossy.
Divide between four bowls. Top with sesame seeds and spring onion to serve.
